I Made Yogurt
24 June 2009
I thought I’d buy a yogurt maker, but I couldn’t find one, so instead I googled “make yogurt” and followed the first instructions I found (which were these) in the laziest possible way. I ended up with excellent yogurt. The texture is perfect I think; but I’d like it sourer, so may let it go a bit longer next time. Screw yogurt makers.
Maybe I will try making cheese sometime?

Sounds like you hit upon a good recipe! I will have to give it a try!
Hi Brian,
This was a timely post for me because I was about to make yogurt from my first batch of left-over raw milk. Our CSA gave me a recipe but I combined it with the one you used to give it a bit more communal common sense, and it worked fine. In fact, it was a very robust process that I was unable to screw up. Even with Ben asking the next morning “Why did you leave the oven light on last night? I turned it off,” it all came out well. Last week was an experiment with low temperature, but the competing bacteria in the raw milk did things that I’m not comfortable with yet. Yesterday’s batch, made by heating to 185 first, was perfect.
Glad you are teaching. Wish I could be a fly on the wall. Have fun on vacation.
